Honey Cashew Chicken

I recently made this Honey Cashew Chicken that I pulled out of a cooking light magazine and it made it to my “keeper” pile.

This recipe was a great weeknight meal. It was delicious and quick to make. The best part about it was the leftovers were just as good as the first time around (as I find many Asian dishes are) and it was great for lunch because it is FULL of protein and the meals comes in one little easy to heat up package. Aside from cooking the instant rice, this was also a one pot meal making for easy clean up, also!

If you truly want to have a “one pot dinner”, Uncle Ben’s makes microwaveable pouches called “ready rice” that are extremely convenient when you don’t want to have to deal with cooking the rice. I cut out the red bell peppers because I do not like them. It seems like a lot of ingredients, but most things you will have in your pantry.

Serve with rice and ENJOY!

Brunch in Vegas: Bobby Flay’s Mesa Grill

I recently visited Vegas and one of my priorities for the trip was to eat at Bobby Flay’s Mesa Grill at Ceasar’s Palace. This is quite certainly the best decision I have made in a long time and turned out to be one of my favorite experiences on our week long trip in Las Vegas. I had heard their brunch is amazing so I made reservations right after we landed. For starters, we ordered the Goat Cheese “Queso Fundido” and the Tiger Shrimp and Roasted Garlic Tamale. I had seen the Tiger Shrimp Tamale on the Food Network show The Best Thing I Ever Ate: Vegas edition.

I usually do not like tamales because of the texture of the masa. This was an exception. The shrimp was cooked perfectly, the corn gave a nice sweetness and crunch and the drizzle of the smoked red pepper sauce gave it a little bit of a kick. The masa (the cornmeal “dough” inside the tamale) had a nice texture and was good. I think it might have been ground finer than what I have had before so the texture was a little creamier.

This was the goat cheese queso fundido. Need I say more? I think one of the best things in life is melty cheese and this was melty goat cheese! YUM! The poblano peppers were a perfect compliment to the rich goat cheese.

I also drank two margaritas there. I had a prickly pear margarita and a regular on the rocks margarita. Although beautiful, the prickly pear margarita was a little too sweet for me, but the house rocks margarita was DELICIOUS! One of the best margaritas I’ve had in a long time (sorry Maudie’s).

Everyone’s meal was great, but I think I ordered the best. I had the Eggs Benedict with Spicy chicken sweet potato hash and green chili hollandaise. This is by far the #1 best brunch meal I have ever had! The English muffin was replaced with the spicy chicken and sweet potato hash and the spicy hollandaise balanced out the sweetness of the sweet potato. On top of all the delicious and bold flavors that were going on in this dish, the eggs were cook perfectly. Next time I am in Vegas I will be going back to Mesa Grill just to order this dish.
